June Webinar Recipes
Boost Your Energy and Manage Your Stress
Ingredients:
- 1/2 cup coconut oil
- 1/2 cup cocoa powder
- 1/4 cup honey
- 1 tsp vanilla extract
Instructions:
- Melt the coconut oil in a saucepan over low heat.
- Remove from heat and whisk in the cocoa powder, honey, and vanilla extract until smooth.
- Line a square baking tin with parchment paper.
- Pour the chocolate mixture into the tin and smooth out the top with a spatula.
- Place in the fridge to set for about 30 minutes.
- Once set, remove from the fridge and cut into squares.
The Power of Positive Thinking
Ingredients:
- 1/2 cup quinoa
- 1/2 cup vegetable broth
- 1/2 red onion, chopped
- 1 garlic clove, minced
- 1/2 red bell pepper, chopped
- 1/2 yellow bell pepper, chopped
- 1/2 green bell pepper, chopped
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- 1/4 cup chopped parsley
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 375 degrees F.
- Place the quinoa and vegetable broth in a saucepan and bring to a boil.
- Reduce heat, cover, and simmer until the liquid is absorbed and the quinoa is tender (about 15-20 minutes).
- In a mixing bowl, combine the cooked quinoa with the red onion, garlic, bell peppers, cranberries, walnuts, and parsley.
- In a separate bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to coat.
- Transfer the mixture to a baking dish and bake for 20-25 minutes, until heated through.
Navigating Personal and Professional Change
Ingredients:
- 1 cup cooked brown rice
- 1/2 cup diced cooked chicken breast
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/2 yellow onion, diced
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
Instructions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the bell peppers and onion and cook until softened (about 5-7 minutes).
- Add the cooked rice, chicken, garlic powder, onion powder, salt, and pepper to the skillet and stir to combine.
- Cook for an additional 5-7 minutes, until heated through.
Understanding Grief and Loss
Ingredients:
- 1/2 cup cooked macaroni noodles
- 1/4 cup chopped celery
- 1/4 cup chopped onion
- 1/2 cup canned tuna, drained
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 1/2 tsp garlic powder
- Salt and pepper, to taste
Instructions:
- Cook the macaroni noodles according to package instructions and drain.
- In a mixing bowl, combine the cooked macaroni with the celery, onion, and canned tuna.
- In a separate bowl, whisk together the mayonnaise, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the macaroni mixture and toss to coat.
